Exercise and healthy food

As you know if you read about me i am not in the best of shape. With the move to an apartment and 10" more snow here than normal this year [avg. 9" we got 19"] i have not been able to get out a lot this winter. So i now have in my living room/hall a treadmill. It is nothing new by far and every single thing on it does not work but. The walking part does work it is on a small incline and i can speed it up. Did ya notice i did not say anything about slowing it down! It is at a fast walk pace to start and that may be good for me. I can picture myself turning it down to a crawl and thinking i was doing real good there. Now i am wondering how many calories i can burn?? It has the feature but sadly does not work. Any which way after i had my hip replaced a little over a year ago understood how important just walking was and much better exercise than i ever gave it credit for. So if anyone knows anything about this i would love any info you could share.                                                                                                                                                          Now a recipe i made last night  that is really good and fast AND HEALTHY!!!!                                                                HAYSTACK SALAD WITH MAPLE VINEGAR DRESSING                                                                                    2 CARROTS                                                                                                                                                     1 SMALL ZUCCHINI                                                                                                                                     1 APPLE                                                                                                                                                                                  Slice all thin                                                                                                                                                       MAPLE VINEGAR DRESSING                                                                                                                     1/4 C CIDER VINEGAR                                                                                                                                 1 TB DIJON MUSTARD                                                                                                                                 1/2 C OIL                                                                                                                                                                                   4 TB MAPLE SYRUP [good real stuff here folks]                                                                                                                                     1TB LIME JUICE [fresh preferred]                                                                                                                                   Mix it all together and shake well . With the lime juice in this it keeps the apples looking good as well as giving it an amazing flavor. I paired this with pork tenderloin chop and apricot cranberry chutney and this was great. recipe coming....

Gotta have em blueberry muffins

I have started the process of cleaning closets. With that i hope to find my books and gear so i can set up this blog better and get pics in too. With that said, these are without a doubt the best muffins i have had. First when you make the batter do NOT let the stiff thickness fool ya they turn out great.                                                     2 1/4 c all purp flour   1 1/2 t baking power  1/2 t baking soda   1/2t salt  3/4 c sugar  1/4 c butter  2 eggs 2 t vanilla  1/2 c greek yogurt  1 1/2 c blueberry  sugar for sprinkling.                                                               Preheat oven 350 degrees beat butter sugar and eggs add vanilla and yogurt. Blend rest of ing except blueberries .Fold the blueberries in . This will be extremely thick and you will think no way can this work. Trust me here. I did not think this would work either. It will be more like a cookie dough that you can pick up with your fingers. Take a breath and fill muffin cups anyway. I use paper liners then spray the liners with oil. At this point you sprinkle the tops with sugar if you wish. Bake 18 - 24 min. My oven takes 20 min.                                             I was told these have 135 calories but i can not attest to that [ I am eating them like that is all they have lol].         I hope you try these and enjoy. Just pop one in the microwave for 10 -15 seconds the next day [and the day after if you still have any] for a quick and great morning treat.   I am learning about this blogging thing so please bear with me as i learn things will get better and post will get laid out better. Have a great day!!!

My first post. Super easy peach cobbler

I am learning here so bare with me please..      You will need: 1 stick butter [may use marg.] 1 cup self rising flower, 1/2 cup sugar , 1t vanilla  , cinnamon for sprinkling, 2 lg cans sliced  peaches [drain only 1 can] enough milk to make a porable batter[ I never measrue this as it does not have to be so exact] .       Melt butter in 13x9 bakeing dish pour both cans of sliced peaches with syrup from one can into dish. mix flour sugar vanilla and enough milk to make a batter about pancake consistancy. pour in rows over peaches. It will sink and look like i will not make a crust, but trust me it will. Sprinkle cinnamon over top now don't be shy here. If you  want a strong cinnamon flavor you can sprinkle some in the batter. bake in 350 oven for 45 minutes. Le cool til just warm. Enjoy.   This is the best peach cobbler i have ever had and SOOOOOO easy
